    Step1

    Soak chickpeas overnight — drain, wash, cover with water and bring to a boil for 20 minutes, simmer for 1 hour and allow to cool

    Drain chickpeas and retain 3/4 of the liquid

    Step3

    Puree chickpeas with a little of the cooking liquid and lemon juice to a thick consistency

    Step4

    Add tahini and garlic and mix well

    Step5

    Place in a serving bowl and drizzle with olive oil and sprinkle parsley and paprika

    Conclusion

    Serve with crackers or sliced raw vegetables.
